Compact passive units that sit directly beneath the pot-wash or prep sink. Suited to cafés, takeaways and small kitchens with a light FOG load and limited plant space. Quick to fit into existing pipework, but they fill fast — they need frequent servicing to stay effective.
Larger passive interceptors installed at floor level in the kitchen or a plant room, handling several fixtures at once. The usual choice for a mid-size restaurant: far more retention volume than an under-sink unit, without the excavation an in-ground tank needs.
Large external tanks buried outside the building, sized for hotel kitchens, food courts, canteens and multi-outlet sites. They hold the greatest volume and need pump-truck servicing. Installation means excavation and drainage works, so it belongs in a fit-out programme.
Powered units that skim separated grease into a collection container continuously, rather than holding it until the next pump-out. Higher upfront cost and they need power and servicing, but they cut the volume of waste going out and suit sites where access for a tanker is difficult.
If your menu, covers or equipment have changed since the original fit-out, the trap specified back then may no longer match your throughput. We remove the old unit and install one rated for how the kitchen runs now.
Cracked baffles, warped lids, failed seals and corroded bodies all let FOG straight through a trap that looks fine from above. Where the unit is otherwise sound we repair it; where it is not, we say so rather than sell you a part that will not fix the problem.
This is the single most common problem we are called out to fix. A grease trap works by slowing wastewater down long enough for fat to float and solids to settle. If the unit is rated below your peak flow, the water simply moves through too quickly — grease never separates, it carries over into the sewer, and the trap is doing almost nothing despite being emptied on schedule. Cleaning more often does not fix an undersized trap. Only a correctly rated one does.

If your kitchen discharges wastewater carrying fats, oils and grease, it needs a grease trap or interceptor fitted before the drainage connects to the public sewer. Dubai's Local Order No. 8 of 2002 governs public health and drainage requirements for food establishments, and untreated FOG must not be discharged to the network. In practice, restaurants, cafes, cloud kitchens, hotel kitchens and canteens all fall in scope. Domestic kitchens generally do not.
Sizing is driven by the flow rate reaching the trap, not the size of your restaurant. The usual method is to total the drainage fixtures feeding the trap — sinks, dishwasher, combi oven, floor gullies — work out the peak drainage flow, then select a unit rated at or above it with enough retention time for grease to separate. Undersizing is the most common installation mistake we are called to correct: the water passes through too fast, grease carries over into the sewer, and the trap fails inspection despite being cleaned on schedule.
Yes, and it is one of the more common jobs we do. If your kitchen has expanded, added fryers, or the original unit was specified for a smaller menu, the existing trap may simply be undersized for current throughput. We assess the actual fixture load, recommend a correctly rated unit, and handle removal of the old trap and installation of the replacement — usually scheduled around your service hours or during a closure.
An above-ground under-sink or floor-mounted unit swapped into existing pipework is often a single visit. A new in-ground interceptor is a bigger job — it involves excavation, drainage connections and reinstatement, so it is normally planned into a fit-out programme or a scheduled closure rather than done around service.
